The sails with the dots are take cover sails. The stripped is full sail. Open fire sails look like they are dirty on SvS.

I cannot speak for Leo but (I believe) the red hull color is due to the Fortune Hunter (lvl 4) upgrade . It's the same hull design shown by Misty Moonlight's Raven pirate, within a separate thread.
